Healthy Recipes For Breakfast
True, you can have breakfast in the simplest possible way, with the popular oatmeal+whey protein combination. This is the fastest solution. And, knowing the taste of modern protein powders, maybe the tastiest as well. But, what if there is no protein powder at hand, you want something more complex or you just like to experiment? Well then, this article is just for you!
Most important ingredients for a healthy breakfast
This breakfast will be based on eggs and oatmeal. This time I am not assuming any of you is on an extreme diet. If you are on a diet, you better use egg whites only, and forget carb sources other than oatmeal. However, this article is not primarily for dieters: this time we wish to offer tasty but healthy and nourishing breakfast options for those who don’t follow any strict dietary regimen, but wish to break out of the common “vicious cycle” of sandwiches or pastries. Needless to say: feel free to try these if you are bulking. Moreover, based on your individual needs, you may use larger amounts than those specified in the recipes.
Coconut oatmeal pancakes
Mix 4 eggs with 3 tablespoons of grated coconut and as much oatmeal that you get a thick dough which you can still pour out of the bowl. If it is too thick, add a little milk. Add some liquid or powdered sweetener. Note: heat will dim the taste of sweeteners. This means, the dough should be brutally sweet when raw to get a pleasant taste at the end. Add some baking powder (about 1 teaspoon) and mix thoroughly. You don’t necessarily need to grind the oatmeal, but you can, if you prefer a smoother dough. If you are a gourmet, you can add some raisins, too.

Spray some oil on a non-stick frying pan. Pour the dough in the pan. Fry at a higher temperature for one minute or two, to make a crust on the bottom of the pancake. (Note: don’t stir! That’s why you need a non-stick frying pan.) Then, lower the temperature. It takes about 5 to 8 minutes until one side gets consistent enough so you can turn it over in two pieces. The other side will need less time. Keep this in mind, otherwise your pancake may dry out and then you must pour some thick protein shake on it to make it more enjoyable :) When ready, all you need to do is let it slide out of the pan and eat. Baking powder is necessary to make the dough loose. If you fry it for the right time, it will almost be like cookie dough.

Fruit oatmeal pancakes
The basics are similar to those of the previous recipe. Again, the main ingredients are eggs and oatmeal. But this time, add tiny pieces of fruit instead of coconut and raisins. For example, a peeled apple, minced into tiny pieces. In this case, a sprinkle of cinnamon will work magic. Add sweetener and baking powder as specified in the previous recipe. Actually, the whole process is similar to the first pancake. You can try any fruit: bananas have already passed the test. Or, should you have extra wishes, you might as well combine both recipes and try the pineapple-coconut pancake.
This time you need a little bit of extra preparation: first of all, soak the oatmeal (which should not be ground this time!) into cocoa. If you want to avoid sugar, use pure cocoa powder and add some sweetener to it. The oatmeal will need about 5 to 10 minutes to soak. Pour off the extra cocoa (if any). You might as well squeeze it to make sure the dough is thick enough. Add the eggs, the sweetener and the baking powder, and fry it as above. Top secret: sometimes I add some grated chocolate, too, before frying... Mmmm.
As you might have guessed, the only limit is your imagination. You can add practically anything to this egg- and oat-based dough: soaked pieces of biscuits (I know, I know: this is totally unclean, but it’s worth a try), bitter chocolate or cottage cheese. And I have not even mentioned various flavorings yet (available in small ampules in supermarkets or grocery stores). With their help, you can create stuff you would have never thought of!
