Fructose is derived from fruits (especially tree fruits, berries and melons), some vegetables such as sweet potatoes and parsnips, honey, and many other plants, including sugar cane. It is an important source of energy for the body. Fructose is up to 1.5 times sweeter than table sugar (sucrose), which means you use less of it to achieve the same sweetness as sugar, and therefore reduce your kilojoule intake. Fructose produces superior baking results and it improves the colour of baked goods.
